Recipe for Baingan ka Bharta
Ingredents: 2 large (750 gm) egg-plants (baingans)2 cups onions-chopped coarsely2 cups tomatoes-chopped to match the onions1 tbsp ginger-finely chopped 1 tbsp ginger-finely chopped 3-4 green chillies-slightly slit1 tsp cumin seeds1 tbsp powdered coriander seeds1/2 tsp garam masala1/2 tsp turmeric powder1/2 tsp powdered red pepper2 tsp salt1/4 cup oil1 tbsp chopped coriander leaves-for garnish
Method:
Roast baingans over a medium flame till it gets a charred look, and sometimes the skin splits also. Place in a container of water, and when cool peel off the charred skin, and cut off the stalk and chop fine. In a heavy-based saucepan, heat the oil and add the cumin seeds and when these splutter add the onions and the ginger and saut?ver high heat, till the onions get a slightly fried look.Add the tomatoes and the green chillies and continue sauteeing till the whole mixture looks glossy.Add the coriander powder, garam masala, turmeric, salt and red pepper and stir a few times to mix well.Add the egg-plant, stir a few times over high heat and then lower the heat, and cook till done. Serve hot garnished with the coriander leaves.
