Recipe for Potage Dubary (Cream of Cauliflower Soup)
Ingredents: 300 ml vegetable stock200 gm cauliflower50 gm roux50 gm onions10 gm garlicsalt and pepper-to taste60 gm butter30 ml cream
Method:
Heat butter, add garlic and onions and saut?br>Add the cauliflower and saut?or 2 minutes. Then add the vegetable stock and cook for about 10 minutes.Add roux and thicken. Put through a blender and sieve.Heat and finish with cream, add small pieces of cauliflower as garnish.
