Recipe for Dum Aloo Lakhnavi
Ingredients: ? kg potatoes100 gm mashed potatoes100 gm crumbled paneer1 tsp red chili powdersalt to taste1 tsp garam masala1 ? tsp kasoori methi3 tbsp ghee1 tbsp butter1 tbsp creamOnion gravy200 gm onions? tsp garam masalasalt to taste1 tsp gheeTomato gravy200 gm fresh tomato pureesalt to taste1 tsp ghee
Method:
For the onion gravy, cook all the ingredients until reduced.For the tomato gravy, cook all the ingredients until reduced. Cut out the cores of the potatoes and deep fry. Stuff the fried potatoes with the mashed potatoes and paneer.Cook the onion and tomato gravies in oil until the oil separates.Add all the masalas and cook for 1 minute. Stir in the butter and the cream. Finally, add the potatoes and simmer.
